Ideas for Ramen Noodles

by Susan Lott

Cheap and easy, ramen noodles can actually be turned into a nutritious meal for your family. To boost the nutritional value, cook it as usual, but add lots of vegetables. Frozen peas, carrots, celery, mushrooms, bean sprouts, onions, etc. You can even add some shredded cooked chicken or beef if you like.

Missionary Yakisoba- Instead of fried rice, do fried noodles! Sauté onions, carrots, celery, peas, cabbage - basically any vegetables you want in a skillet. While they’re softening, boil the noodles until they’re almost soft but not quite, about 2 minutes. Drain and rinse with cold water, then toss with the vegetables. Season with the flavor packet, 1 tsp soy sauce, a dash each of cumin, coriander, curry powder, salt, pepper, and chili powder. Works best with chicken flavor.

Chinese Chicken Salad- Combine 1 chopped head cabbage and/or lettuce, 6 chopped green onions, 1c. shredded cooked chicken (optional), 3 tbs. sesame seeds, 1 can mandarin oranges, and 2 packages of ramen noodles, crushed. Drizzle with Olive oil. Add flavor packets from ramen, ˝ tsp rice vinegar, dash of soy sauce. Sprinkle with salt, pepper, and ˝ tsp sugar.
