Peaches

reduced sugar, no-syrup method

Fill a clean sink with very hot water. Place whole peaches in the water for a few minutes to loosen skins. Peel peaches. Halve, slice or quarter as desired. Pack into quart jars.

Add 1/3 c. sugar to each jar. Fill jars with water leaving ½ inch headspace. Cap jars as usual and process in boiling water bath 30 minutes.

NOTE – it is best to only peel enough peaches to fill 7 quart jars at once (one batch). That way, nothing will go brown while you arewaiting for processing to finish. If you're fast on the peeling and jar packing, there's no need for Fruit-Fresh or anything like that.
